Centrifugal v Cold-Pressed Juice - what's the difference?
It’s true – not all juices are created equal.
From long life juices on supermarket shelves, to freshly squeezed fruit juice at your local café and refreshing cold-pressed juice in a cleanse, you may be aware some of these juices are better than others – but which ones, and why?
Here at Home Juice, we always get asked about our juicing process. Other than the fact we use fresh, organic fruits and vegetables, the biggest difference between our juice and others, is that we have cold-pressed juices. Why is this better than a regular centrifugal juicer or long life juice? Let us break it down (press it down, even) for you…
What is a centrifugal juicer?
Centrifugal juicers are your most commonly found juicers in department stores. If you’ve ever made your own juice at home or ordered a juice from a café, it’s probably been made with one of these. They retail for anywhere from $100 right up to $400 and more for some of the higher end models. They use a fast spinning metal blade that as the name suggests uses centrifugal force to separate fruit and vegetable juice from flesh, passing it through a mesh filter.
Sounds okay so far, however, this extraction method produces heat which causes the enzymes and nutrients to oxidise, and unfortunately this removes some of the benefits from the fresh produce that has been used. This process also means the juice won’t last as long, so it’s best consumed immediately - no good for a juice cleanse!
This method also struggles to extract juice from leafy greens, which is obviously a huge problem when trying to make a nutritious green juice!
What is a cold-pressed juicer?Cold-pressed juicers, unlike centrifugal machines, don’t have any internal blades that tear up the fruits and vegetables. Instead it works to slowly crush and press the produce, hence where ‘pressed’ comes from in the name. As there are no fast moving parts in the machine no heat is generated as the produce passes through, resulting in more nutrients being retained. It also means the juice lasts longer (without additives or preservatives like long life juice) so it’s the ideal choice if you’re planning a cleanse.
Cold Pressed equipment tends to be more expensive to buy, starting at a few hundred dollars, but will produce better results for those who want to make the most nutrient dense versions of juice. Leafy greens are no issue for a cold presser PLUS these machines can process nuts to create nut mylks (yum!).
If you don’t want to invest in the juicer though, you can always purchase fresh cold-pressed juice from a retailer or in a cleanse – we might know a guy.
How about High Pressure Processing (HPP)?
Long life juices! Traditionally the process of pasteurising juice in order to extend shelf life has been achieved through thermal methods in order to deactivate the vegetative flora found in fresh fruit and vegetables (the reason fresh juice only lasts for a few days). This means applying heat in order to alter the produce, which as we’ve just learnt, diminishes the nutrient content of your juice.
HPP is a method of pasteurisation where cold water and pressure are applied to packaged materials instead of heat. Whilst they advertise the HPP method as ‘cold-pressed juice’, the process and associated equipment are still under close scrutiny to determine the truth behind this, and how significantly the process changes the nutrient content of the final products.
It can also only be applied to already packaged plastic bottles, as the sheer force of the process would break glass bottles, not to mention it is hugely expensive and better suited to manufacturing plants than a kitchen - we’ll let this photo of the equipment speak for itself!
In short - beware of cold-pressed juice advertising a shelf life longer than a few days! If it’s undergone the HPP process it’s been mass-produced on an industrial scale, and often contains additives and preservatives – no thanks!
Is there any nutritional difference between the types of juicers?
Yes! But you don’t have to take our word for it, let’s talk science.
Many studies have shown that using a cold-pressed juicing method has many nutritional benefits over a traditional centrifugal juicer. Below we’ve taken the key findings from a certified lab test that was conducted by juicing equipment company, Good Nature. In the experiment they tested for the presence of the below vitamins in different juiced vegetables.
- Carrot Juice – Vitamin A
- Beetroot Juice – Vitamin B9 (Folate)
- Kale – Vitamin C
Cold press 15% higher than centrifugal
10,000 IU/100g vs 8.500 IU/100g
Cold press 16.2% higher than centrifugal
31 mcg/100g vs 26mcg/100g
Cold press - 13.1% higher than centrifugal
23mg/100 vs 20mcg/100
Across all of the three vitamin tests, the cold-pressed juices had a higher nutritional value than their centrifugal counter parts. Which shows us that the cold-pressed method is more effective in retaining the nutritional content of the produce.
